A new post after a long time. I Baked these wholesome and delicious Banana Amaranth Muffins a while ago but life got in the way as it does and I never got around to sharing the recipe. These fat muffins turned out like plump pouffs. They are loaded up on bananas and chocolate chips ( who doesn't like choco chips, right?) and make quite a satisfying breakfast/snack; the sort that'll put a lazy smile on your face.

Fatehpur Sikri on a cold, foggy winter morning was as imposing and beautiful as it would have been in the heydays of Mughal glory. Its red sandstone shone proudly as the slowly emerging rays of the sun revealed its regal splendour.

The imposing and aptly-named Buland Darwaza was awe-inspiring, refusing to fit into the frame of my camera lens. The white, marble dargah of Hazrat Salim Chisti gleamed like a pearl in the centre of the rust-coloured complex. Stark structures stood elegantly beside intricate carvings and spoke the saga of Akbar's reign.

I marveled at his political acumen, his influence on our history and felt proud that this fabulous complex is a part of my heritage. I also felt a little despondant that as Indians we spend time quibbling over our differences when we should be celebrating our rich diversity. A diversity that (in my opinion) has no parallel in any other part of the world.

My mom turned 75 today. A milestone birthday, which we celebrated simply as per her wish. I'm not big in b'day posts on social media, but making an exception today to share a few things about her with the world.

She has the strength of an oak standing tall through personal losses and tragedies. My brother and I have used her resilience to get through some of life's low phases. She abhors self pity and believes in living life with dignity.

As a doctor she's committed and strict but compassionate. She went to work right through both Covid waves, except when she got the virus. And when she was ill, her HIV+ and leprosy patients and die-hard fans made they kept the tiffins coming.

She and I fight like all mothers and daughters but we also share honest and open conversations and lean on each other for support. She's a kind and understanding mother-in-law. She's progressive, and speaks-up for women. On her 75th birthday, I feel immense gratitude for having a mom like her.

2022 was a mixed bag of blessings and setbacks for me. In the end, as I look forward to the new year, I feel gratitude for all the love and support through good times and bad. On the threshold of 2023, I'm packing all the grit, strength and positivity that I can muster, to live more fully, and deliberately, with greater joy, creativity and kindness. Since I didn't bake this festive season for various reasons, I decided to redeem myself by baking this light, moist and delicious lemon olive oil bundt cake. Half the flour is AP while the other 50% is a mix of whole wheat and jowar flours. Olive oil and whole eggs make the cake light and soft while fresh lemons from my garden add the citrusy tang and aroma. The smell of lemon oil in the zest really shines through. Its bright flavour is like sunshine, cheering us up on these cold, cold days.

Revisited an old favourite. The Qutub Minar still takes my breath away with its beauty and grandeur. Walking around the tastefully lit monument complex under a clear, dark blue, night sky ornamented with a delicate crescent moon, was quite magical.

The iconic iron pillar, the imposing, magnificently carved arches, the pillared corridors of the masjid, and every small and large edifice from history seemed to appear as if alive. We spent 2 hours on the @intachheritagewalks, admiring and absorbing the stories and architecture of the place. Every now and then during the walk, I found myself stealing a look to admire the minar. This wasn't my first visit there, doubt it'll be my last.

Sweet cherries stuck in a quicksand of gooey chocolate. Doesn't it sounds like a delicious jam to get stuck into? Dig into a velvety chocolate cherry clafoutis, this summer. Ripe, black cherries are at their cheapest now and it's time to bake this classic French dessert with a chocolaty twist.

A clafoutis is basically cherries, or berries or stone fruit such as peaches and nectarines or sometimes, apple or pear, baked in a flan-like custard of flour, eggs and milk/cream. Banana bread becomes doubly dark and delicious with cocoa and dark chocolate chips. This one has the goodness of two whole grain flours - barley and whole wheat. Although I haven't used any butter, the bread is tender and soft because it has oive oil and a generous quantity of soft, ripe bananas. I'm not a fan of frosting because I don't feel the need for extra sugar and fat on everyday cakes and bakes. More importantly, the banana bread is delicious enough on its own. The heat is on! And I'm craving cold things to eat at every meal. A big helping of watermlon tomato salad is my lunch. It's cool, crunchy texture together with sweet, tart and spicy flavours makes the afternoon a little more bearable

This salad is dressed with a Mediterranean-style vinaigrette of crushed garlic and tomatoes doused with extra-virgin olive oil, a splash of lemon juice and a light dusting of ground cumin, black pepper and paprika. Nothing could be faster, simpler or more refreshing than this beautiful salad.

Mangoes are everywhere and so I made 4 types of chutneys/pickles with them. This is an Andhra style raw mango and sesame chutney, mamidikaya nuvvulu pachadi in Telugu. It's really simple but deliciously tangy, nutty and creamy at the same time. This chutney uses raw mangoes that have ripened a little - about 30% maybe. Niter kibbeh or nit'ir qibe is a wonderfully fragr

Niter kibbeh or nit'ir qibe is a wonderfully fragrant clarified butter or ghee. The process is the same as making ghee except that spices are added to the boiling cream.

I used about 1400g of cream to get 500g of niter kibbeh. The cream must be cooked on the lowest flame, else it'll burn. For flavour I used:
3 tbsp chopped garlic
2 tbsp chopped ginger
2-inch piece of cinnamon
3 black cardamoms
3 cloves
1 tsp black pepper
1 tsp fenugreek seeds
1 tsp coriander seeds
1 tsp cumin seeds
1/4 tsp turmeric powder

I couldn't find typically Ethiopian spices like kosseret and besobela but even without them, the niter kibbeh turned out smoky and aromatic. You can add dried herbs too if you like. Try it!

Mackerel, bangda, ayala or kannangadutha is a regular on my table. An inexpensive, healthy fish packed with protein and Vitamin B, I've made curries with it, fried it in different ways and grilled it stuffed with Goan reichad and green masalas. This time, I used chermoula, a marinade popular among the fishing communities of North Africa, to flavour mackerel.

Bursting with green leafy intensity, a hint of smokiness from cumin and ciriander snd the bright tang of lemons, chermoula is a perfect foil for the intense oil-rich taste of mackerel. My experiments with whole grain baking yielded thus lemon sheet pan cake. I incorporated jowar or sorghum flour in the recipe with happy results. A generous amount of Greek yoghurt and olive keep the cake texture soft and the crumb tender. I know eggless cakes are all the rage but nothing like eggs to make a cake fluffy, especially those naked rith whole grain flour, which are bereft of gluten and can be dry.

Loaded with lemon juice and zest, this airy cake gets a final lemony drenching once it's out of the oven. These recipes are experimental and I share them when I feel they work. But I also know that recipes can always be improved upon. So as readers, fellow bakers and fellow eaters, please share your tweaks and ideas to help better this bake.
