At the end of a long day, I like nothing better than to take my time to enjoy my meal. And if the meal is this Thai Tofu Vegetable Soup, even better, because I would've spent very little time preparing it. That itsy bitsy bit of effort would result in a deeply satisfying soup packed with health and flavour.
Simple and easy as it is, made with everyday ingredients - almost any vegetables from the fridge, ginger and garlic, chilli sauce, tofu snd coconut milk - it tastes as if I'd spent some serious time cooking it. An intense, gnawing craving for bread led me to ba

An intense, gnawing craving for bread led me to bake this beautiful red Sourdough Pull-Apart Bread. A little Sourdough discard can make such a delicious difference in flavour. What would've been a regular buttery bread turned into something complex with a kiss of tang and fermented fragrance. I roasted beetroot and garlic and whizzed them up with cinnamon, fennel seeds, dollops of creamy ricotta and salty feta to make the filling. The rich, salty interior worked as the perfect compliment to the sourdough, and the pop of colour made it doubly tempting. This bread is light, cottony soft; something you can gently break with your fingers and eat. This bread is ideal for a communal meal with friends and family gathered around a table. The recipe can easily be doubld to feed a crowd, perhaps as part of a grazing table. I promise you will have no leftovers.

I have been looking for a pan like this one my entire life. Made some pepper chicken for dinner and my Stahl Blacksmith Hybrid cast iron pan was perfect for this (let me add that this is not a paid promotion). The chicken browed beautifully with just a little oil and the heat distribution cooked the dish exactly how I wanted. It's extremely low maintenance, needs no seasoning and is lighter than regular cast iron. I use it for stir frying, sauteeing, making eggs and much more. It has become my favorite pan to use. So just wanted to share my delight wit fellow cooks and give a shoutout to @stahl_india or making such a superb product.

Buttery and flaky with a tangy twist, my Sourdough Quiche Crust made me a very happy woman. I'd been meaning to make a sourdough quiche/pie crust for while; don't know why I didn't. And now I feel my next few pies and quiches will only be made this way.

Also, to those of you with jars of pecious sourdough discard in your fridge, let me recommend this crust as one more way of using up your stash. I threw in some almond meal in the mix of flour and sourdough discard, to add a nutty bite. And it worked!

The filling is lamb and roasted red peppers. But there's a twist here too. Instead of milk / cream, the custard (if you can call it that in this case), has eggs and Greek yoghurt. The heat melted the fat, releasing hitherto unknown flavours and the charred bits tasted of smokey sweetness. I'm just sharing mine, which is a silky mix of cream and full fat milk reduced till slightly thickened, infused with crushed cardsmom seeds and a smidgen of saffron threads, then sweetened with fruity mango pulp and chilled into bright orange-yellow batons. A bite of this kulfi on a hot summwr day is all the desressing I need. I think you I'll like it. It's so simple and quick, that I recommend making a large batch to stash in your freezer so that you can raid at will.

Have you tried bamboo shoot? I've eaten it bot fresh and fermented in Naga-style salads and pork curry and in pickles from Kodagu and the North East. Although fresh bamboo shoot is not sold by our local vegetable shops, it is easy to buy it online. Cans of fresh bamboo shoots in water and even fermented bamboo shoot are both freely available.

This Bamboo Shoot Mutton Curry is a simple way of using this fibre and nutrient-dense vegetable. Vegetarians can leave out the meat and the curry will be as delicious. It has a somewhat thin base of fresh coconut and a few curry spices like coriander and cumin. It is a light curry, not heavily spiced although I have been generous with the curry leaves. I liked the results of my first bamboo shoot curry. I hope you do too.

Here's a simple Grilled Chicken and Mango Salad that makes a great lunch on a hot, sweltering, summer day. I marinated my chicken thighs in yoghurt and a few spices andgrilled them in he oven. Then I diced and tossed them with ripe, firm mangoes, a few toasted cashews for some crunch, piquant jalapeños for a a touch of heat and a cooling, creamy yoghurt dressing. On the side I had some chilled wedges of crisp iceberg lettuce. The picture doesn't do the salad justice, I think. I took the photos in a hurry because I couldn't wait to eat! But I promise, you'll relish this delicious sweet and spicy salad.

Soup season continues in Delhi with the chill extending into February. Dinners at my place ends up being a 1-bowl meal sitting by the heater ( my dining area is too cold for me). I try to make that one bowl as nutritious, delicious and warming as I can. Making use of the in-season turnips ( not everyone's favorite), pearl barley and tiny amount of lamb, I made this filling, healthy and umami-packed soup. It certainly made us feel cosy and cared-for.
