Avocados with Caramelised Onions on Toast
Surprisingly simple but delicious open sandwich
- 2 large ripe avocados peeled sliced and lightly drizzled with lemon juice
- 4 large onions thinly sliced
- 1 tbsp vegetable oil
- 11/2 tbsps balsamic vinegar
- 6 slices whole wheat bread
Heat oil in a pan and fry the onions on medium to low heat for 20 mins till they start turning golden brown. Add the balsamic and cook for a minute more.
Toast the bread, spread caramelised onions topped with avocado slices. Sprinkle with salt and pepper and serve immediately.
