Avocados with Caramelised Onions on Toast

Surprisingly simple but delicious open sandwich

Ingredients

  • 2 large ripe avocados peeled sliced and lightly drizzled with lemon juice
  • 4 large onions thinly sliced
  • 1 tbsp vegetable oil
  • 11/2 tbsps balsamic vinegar
  • 6 Slices whole wheat bread
  • salt
  • Pepper

Instructions

  • Heat oil in a pan and fry the onions on medium to low heat for 20 mins till they start turning golden brown. Add the balsamic and cook for a minute more.
  • Toast the bread, spread caramelised onions topped with avocado slices. Sprinkle with salt and pepper and serve immediately.
